Christmas Pudding
Christmas Pudding is a type of pudding traditionally served as a part of the Christmas Dinner in UK,and in other countries where it has been brought by British and Irish immigrants. It has it's origins in medieval England, sometimes known as a Plum Pudding. This can also refer to other kinds of boiled pudding involving dried fruit. Despite the name "Plum Pudding", it contains no actual plums due to the "Pre-Victorian", use of the word "Plums" as a term for Raisin. Pudding is traditionally composed o thirteen ingredients, symbolizing Jesus and the twelfth Apostles, including many dried fruits held together by eggs and suet, sometimes moistened by treacle or molasses, flavored by cinnamon, nutmeg etc. Pudding is usually aged for a month or more, even a year. The high alcohol content of the pudding prevents it from spoiling during this time. Pudding is a type of food that can be either a dessert or a savory dish that is part of the main meal.
The modern usage of the word Pudding denote primarily desserts has evolved over time from the originally almost exclusive use of the term to describe savory dishes, specially those created using a process similar to that used for sausages, in which meat and other ingredients in mostly liquid form are encased and then steamed or boiled to set the contents. Black pudding, Yorkshire pudding, and haggis survive from this tradition. In the United States and some parts of Canada, pudding characteristically denotes a sweet-milk based dessert similar in consistency to egg-based custards, instant mousse, often commercially set using cornstarch, gelatin or similar collagen agent such as the "Jell-O" brand line of products.
